Ingredients for 1 servings:

  • 500 g flour
  • 250 g butter
  • 250 g sugar
  • 1 tbsp vanilla sugar
  • 2 eggs
  • ½ tsp baking powder
  • Jam (blackcurrant jam)
  • powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cookie cutters for filling

Mix the butter and sugar. Stir in the eggs. Knead in the flour mixed with the baking powder. Chill the dough for 30 minutes. Roll out on a well-floured surface and cut out shapes. There should be the same number of motifs. Use a thimble to cut out a hole in half of the cut-out cookies, as the cookies will be filled with jam. Place on a baking tray lined with baking paper. Bake at 200°C top and bottom heat or 180°C fan-assisted for approx. 10 minutes. The cookies should still be light in colour. Once cooled, spread a tart jam (e.g. blackcurrant) on half of the cookies without the hole and place the other half with the hole on top. Finally, dust with icing sugar. The cookies store well in a baking tray or Tupperware container and taste particularly good when left to mature for a few days.
