Apricot chutney

Ingredients for 1 servings:

  • 1 ½ kg apricot(s), fresh (apricots), pitted weighed
  • 2 garlic cloves
  • 1 piece(s) ginger, fresh
  • 350 g onion(s), chopped
  • 60 ml vinegar (apple cider vinegar)
  • 220 g cane sugar
  • 2 tsp salt
  • 2 tsp mustard seeds
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg, ground
  • ½ tsp cayenne pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut washed, pitted apricots into pieces. Crush the garlic cloves and grate the ginger. Combine with all other ingredients in a large, acid-resistant saucepan and simmer gently, stirring occasionally, until the fruit and onions are soft and a thick chutney has formed. Pour into prepared jars, seal tightly, and let it steep for a few weeks. It goes very well with spicy dishes, poultry, fish, or cheese.
