Potato gingerbread

Ingredients for 1 servings:

  • 250 g potatoes
  • 3 eggs
  • 375 g sugar
  • 225 g flour
  • 1 ½ packets of baking powder
  • 250 g hazelnuts, ground
  • 50 g candied orange peel
  • 50 g candied lemon peel
  • 2 tsp cinnamon powder
  • ½ tsp clove(s)
  • wafers
  • Chocolate coating
  • n. B. Almond(s), peeled

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Boil the potatoes, peel them, and press them through a ricer while still hot. Chill. Beat the eggs until frothy, then add the sugar. Beat until creamy. Mix the flour with the baking powder, add the hazelnuts, candied orange and lemon peel, cinnamon, cloves, and potatoes. Knead into a smooth batter. Spread the batter on the wafers and place them on a baking sheet. Bake in a preheated oven at 180°C (top/bottom heat) for about 20 minutes. Cover the potato gingerbread with the chocolate coating melted in a water bath and decorate as desired.
