Ingredients for 1 servings:

  • 350 g flour
  • 1 tsp baking powder
  • 1 m.-sized egg(s)
  • 175 g brown sugar
  • 125 g butter
  • 4 tbsp honey
  • Cinnamon powder
  • Gingerbread spice

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

First, melt the butter, sugar, and honey in a small saucepan and let it cool slightly. Sift the flour and baking powder into a bowl and add as much cinnamon and gingerbread spice as you like (I use 1-2 teaspoons of each), then add the egg and the butter, sugar, and honey mixture. Knead everything thoroughly. If it doesn’t form a ball yet, simply leave the dough in the bowl, cover it with a tea towel, and chill for about 60 minutes. Otherwise, form a ball, wrap it in cling film, and chill for about 30 minutes. It should be elastic and supple, not stiff and sticky. Cut out the dough as desired and bake at about 180°C for 15 minutes.
