fine pastries

Knead the butter, sugar, egg yolks, orange flavorings, flour, cornstarch, and baking powder together to form a smooth dough. This works best with your hands on the worktop/kitchen table. Let the dough rest at room temperature for 30 minutes. Then roll it out to about half a centimeter thick. Use only a little flour, as the dough is still very easy to work with. Use a round cookie cutter to cut out small coins. Bake the cookies at 170 degrees Celsius (convection oven) for about 12 minutes until light golden. Then, while the cookies are still warm, spread half of the cookies with orange marmalade and then place the other half on top. Once cooled, decorate with a little melted chocolate. Don’t use too much or too strong a chocolate, so as not to overpower the orange flavor.
