Ingredients for 1 servings:

  • 150 g sugar
  • 50 g cornstarch
  • 3 pinches of baking powder
  • 150 g flour
  • 400 g milk
  • 2 egg yolks
  • 3 tsp coffee powder, instant
  • 50 g cornstarch
  • 50 g sugar
  • 250 g butter
  • 18 pieces of confectionery (mocha beans covered with chocolate)
  • 50 g almonds, sliced ​​and roasted

Instructions

Line a 26 cm springform pan with greaseproof paper or wrap an aluminum ring with baking paper. Melt the chocolate coating in a water bath, not too hot. Cream the softened butter with the sugar, cinnamon, lemon juice, and egg yolk until light and fluffy. Add the still-warm chocolate coating and continue stirring. Beat the egg whites with sugar and salt. Mix the beaten egg yolks with the sifted flour/wheat starch/baking powder into the egg whites with a wooden spoon and fold in. Pour the mixture into the springform pan and bake at 170°C for about 45-50 minutes. Cool the cake base upside down on a wire rack. Cut the cake base in half 2-3 times. Mocha buttercream: Make a cream according to the instructions using milk, egg yolks, wheat starch, and instant coffee (or mocha pudding powder). Stir the cream frequently to prevent a skin from forming. Cream the butter until light and fluffy and slowly stir in the cold pudding. Then beat the cream until fluffy and fluffy. Spread the prepared cake bases thinly with the cream and assemble. Spread the remaining cream over the cake, reserving some for decoration. Pipe rosettes with a piping bag and decorate with mocha beans and almond flakes. Tip 1: If the buttercream is too soft, refrigerate it slightly; if it’s too firm, briefly place it in a bowl of warm water. Tip 2: Refrigerate the cake for a few hours to allow the mocha flavor to develop.
