Avocado-mango salsa with shrimp

Ingredients for 4 servings:

  • 1 avocado(s)
  • 1 mango(s)
  • 2 spring onions
  • 2 tomatoes, depending on size three
  • ½ chili pepper(s)
  • 4 prawns, cooked
  • 1 garlic clove(s)
  • 4 tbsp oil, olive or neutral
  • 2 tbsp lemon juice
  • 2 tbsp orange juice
  • salt and pepper

For the dressing: Finely dice or crush the garlic clove and sauté in the oil (do not brown). Whisk the cooled garlic oil into the lemon and orange juice mixture and season with salt and pepper. Note: Reserve four thin slices each of the avocado, mango, and tomato for garnishing! Drizzle the avocado with lemon. Peel the avocado and mango and finely dice the flesh. Mix immediately with the dressing. Trim and wash the spring onions and slice into fine rings. Deseed the tomatoes and chili pepper and also dice them finely. Carefully fold everything in and season with salt and pepper. Serve on plates using garnishing rings. Place a prawn on top of each. Garnish with the reserved fruit and vegetable slices.
