Advent cake with speculatius

Ingredients for 1 servings:

  • 270 g Spekulatius (spiced speculatius)
  • 90 g butter (half-fat butter)
  • 150 g cream cheese
  • 250 g yogurt (vanilla yogurt)
  • 525 g low-fat curd cheese
  • 4 tsp honey
  • Sweetener, liquid
  • 1 pinch of cinnamon
  • 1 pinch of spice mix (speculoos spice)
  • 1 pinch of cardamom
  • 4 sheets of white gelatin

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

without baking

Crumble the speculatius biscuits and knead them with the butter. Pour the mixture into a springform pan lined with baking paper. Press firmly and chill for about 30 minutes. Mix the cream cheese with yogurt, quark, honey, and spices, and season with sweetener to taste. Dissolve the gelatin according to the package instructions and fold it into the quark cream. As soon as the cream begins to set, spread it over the biscuit base. Chill the cake overnight.
