For the schnitzel: Sprinkle flour on one plate, break the egg on a second plate and season with salt and pepper, add a dash of cream and whisk the egg. Sprinkle the breadcrumbs on a third plate. Then turn the minute steaks over on the plates in the following order: flour, egg, breadcrumbs. Heat sunflower oil in a pan. There needs to be enough oil in the pan for the minute steaks to float slightly; if there is too little oil, they will burn! Fry the minute steaks on both sides until golden brown, then pat dry with a piece of kitchen paper! For the fried potatoes: Boil the waxy potatoes and let them cool, as this makes them easier to slice thinly. While the potatoes are cooking, dice the onion, garlic and bacon. Once the potatoes have cooled, cut them into thin slices and fry them in a pan with sunflower oil. Once they’re lightly golden, add the onions, garlic, and bacon and fry until the onions are translucent and the potatoes are slightly crispy. Season to taste with chives, dill, salt, and pepper.
