Ingredients for 2 servings:
- 2 large rolls (wholemeal rolls), preferably round
- 1 tomato(s)
- 2 leaves of lettuce, of your choice
- 100 g rice
- 1 carrot(s)
- 1 small zucchini
- 1 egg(s)
- 40 g flour
- Oil, for frying
- 100 g cream cheese, 1.5% fat
- 1 piece(s) cucumber(s), approx. 50 g
- 1 tbsp parsley, chopped
- 1 tbsp chives, finely chopped
- Pepper, freshly ground
- Salt

Veggie, meat-free, yet still delicious and juicy. A great way to use up leftover rice from the day before.
Either use rice from the day before or cook 100g of rice and drain well. It should be as dry as possible. Deseed and grate a small piece of cucumber, about 5-7cm, sprinkle with salt, and let it drain a little in a sieve. Then fold it into the cream cheese and mix in the herbs. If you like, add a little more garlic. Season with freshly ground pepper and add a little more salt if necessary. Coarsely grate the carrot and zucchini. Depending on the situation, you may also want to let the zucchini drain a little; ideally, do this in a sieve with a little salt, just like you did with the cucumber. Whisk the egg, season with salt, and pepper. Mix the rice with the vegetables and knead in the egg. Sprinkle the flour over the rice and mix it in. Shape the mixture into two burgers; this works best with wet hands. Heat the oil in a pan and fry the burgers over medium heat for about 5 minutes on each side; they should be nicely browned. In the meantime, cut open the whole-wheat buns, toast them if desired, and spread both sides with the cream cheese mix. Top the bottom halves with the lettuce leaf. Slice the tomato. Place the burger patty on the bottom halves of the bun, scatter the tomatoes on top, and place the top halves on top, pressing down lightly. Homemade wedges or sweet potato chips go well with the burgers. It’s best to make double the amount of cream cheese mix, dilute it with a little milk or water, and serve as a dip.
