Ingredients for 2 servings:

  • 2 thin schnitzels
  • 2 egg yolks
  • 1 cup of cream
  • Breadcrumbs
  • Flour
  • salt and pepper
  • oil
  • 1 onion(s)
  • 1 jar mushrooms or chanterelles
  • Ready-made sauce mix
  • Parsley
  • 2 eggs
  • 2 slices of toast
  • Paprika powder

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Pound the schnitzels and season with pepper, salt, and paprika. Heat the oil in a pan. Whisk 1/2 cup of cream until slightly thickened and fold into the egg yolks. Coat the schnitzels in flour, dip them in the egg-cream mixture, and then coat them in breadcrumbs. Fry on both sides until golden brown and crispy. Roughly dice the onion and heat the oil. Sauté the mushrooms and onions vigorously. Prepare the sauce and add it to the mushrooms. Season with 1/2 cup of cream and the parsley. Fry the eggs (and the remaining egg whites) in a pan until crispy. Toast the bread until golden brown. Place the schnitzels on the bread and spread the sauce over them. Finally, top with the fried eggs.
