Spaghetti Aioli Sicilian style

Ingredients for 4 servings:

  • 500g spaghetti
  • salt water
  • 2 small onions
  • 1 ½ bulb(s) garlic
  • 3 anchovies
  • 1 tsp capers
  • 1 tsp sugar
  • chili powder
  • salt and pepper
  • Parsley
  • ¼ liter of water
  • ½ lemon(s)
  • e.g. Parmesan
  • 1 dash of olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely chop the onions and garlic. Then bring the salted water to a boil for the spaghetti and cook the spaghetti while you prepare the sauce. Add a splash of olive oil to the pan and sauté the garlic and onions over low to medium heat, adding water continuously to prevent them from browning. Meanwhile, add the anchovies, sugar, salt, pepper, chili powder, and lemon juice, and season to taste. Finally, add the capers and parsley to the sauce. Simmer the sauce until nice and creamy. Drain the spaghetti and let it drain. Pour the sauce over the spaghetti and serve with Parmesan cheese. The 1.5 cloves of garlic are really needed and don’t taste too overpowering at the end!
