Mixed vegetable soup with milk

Ingredients for 1 servings:

  • 1 onion(s)
  • 300 g carrot(s)
  • 300 g broccoli
  • 200 g leek
  • 1 liter vegetable broth
  • 1 liter milk, 1.5% fat
  • some herbs, mixed, chopped, e.g. dill, lovage, parsley
  • salt and pepper
  • nutmeg
  • some locust bean gum
  • 2 tbsp oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Slice the carrots and leek. Separate the broccoli into florets. Chop the onion and sauté in the heated oil. Add the remaining vegetables and sauté briefly. Add the vegetable stock and milk and bring to a boil. Reduce the heat and simmer for about 15 minutes. Purée the soup and thicken with a little carob bean gum, if desired. Season with salt, pepper, and nutmeg and serve sprinkled with the chopped herbs.
