Alsatian onion cake

Ingredients for 1 servings:

  • 250 g flour
  • 250 g quark
  • 1 pinch of salt
  • 8 large onions
  • 125 g butter
  • 150 g bacon
  • 250 ml cream
  • 125 g yogurt
  • 3 eggs
  • 1 pinch(s) paprika powder
  • 2 cloves garlic
  • 3 tsp cornstarch
  • pepper
  • 150 g cheese (Gouda)
  • 125 ml water

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

For the dough, sift flour into a bowl, crumble quark over it and mix. Add water and salt. Knead everything into a smooth dough, cover and let it rest in the refrigerator for an hour. During this time, prepare the topping: Peel and roughly dice the onions and sauté them in the butter until translucent, but not completely soft. Let it cool. Cut the bacon into small cubes. Mix together the cream, yogurt, eggs, spices and cornstarch, adding garlic cloves if desired. Roll out the dough into a springform pan, pressing a dough edge into it. Spread the topping evenly over the rolled out dough. Pour the cream over the top. Bake on the bottom rack of a preheated oven at 250°C for 25 minutes, until the cake is golden brown.
