very tender, with gingerbread spice

Melt the butter and clarified butter and let it cool again. Then beat until fluffy, adding the sugar a spoonful at a time. The mixture should be very creamy. Stir in the remaining ingredients and knead into a dough (with a little flour if necessary). Chill for about 30 minutes. Roll out the dough on a floured board, cut out hearts, and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 150°C (convection oven) for about 8-10 minutes. Once cooled, pipe chocolate stripes on top, sprinkle with powdered sugar mixed with a little gingerbread spice, or arrange them with jam.
