Ingredients for 1 servings:
- 4 eggs
- 4 tbsp water, hot
- 130 g sugar
- 1 packet of vanilla sugar
- 100 g flour
- 2 tsp, leveled baking powder
- 100 g cornstarch
- 1 jar jam (cherry)
- 200 g hazelnuts, ground
- 800 ml whipped cream
- 4 packets of vanilla sugar
- 4 packs of cream stiffener
- 400 g marzipan (raw mass)
- 100 g powdered sugar

Hazelnut cream cake with marzipan topping
For the sponge cake, beat the eggs and hot water in a mixing bowl with a hand mixer (whisk) on high for 1 minute until frothy. Mix the sugar and vanilla sugar. Sprinkle in the mixture after 1 minute while stirring and beat the mixture for a further 2 minutes. Mix the flour with the baking powder and cornstarch, sift and briefly stir in on the lowest speed. Pour the batter into a springform pan and smooth it out. Place the pan on the oven rack. Bake in a preheated oven at 180°C (conventional oven: 160°C, gas mark 2-3) for about 35 minutes. Note: Please refer to the oven instructions. Remove the cake base from the pan, turn out onto a wire rack lined with baking paper and allow to cool. Then carefully peel off the baking paper. Cut twice. Knead the marzipan mixture with the icing sugar and roll out between two layers of cling film. When rolling out the cake, always open the sides and roll out so that the area on the sides is always 10 cm larger than the diameter of the cake base. Spread both cake bases thinly with cherry jam. Whip the 800 ml whipped cream until stiff, add 4 packets of vanilla sugar and 4 packets of cream stiffener. Fold the hazelnuts into the cream. Spread 1/3 of the cream mixture on the bottom cake layer. Place the second layer on top and spread another 1/3 of the cream mixture on top. Place the third layer on top and spread the remaining cream. Remove the top layer of foil from the marzipan. Place the marzipan and the bottom layer of foil over the cake. Remove the bottom layer of foil and cut off any excess marzipan with a knife. The leftover marzipan can be used for decoration.
