Ingredients for 2 servings:
- 250g penne
- 250 ml cream
- 1 zucchini
- 10 tomatoes (cocktail tomatoes)
- 1 jar black olives pickled in oil
- some thyme, preferably fresh
- chili powder
- salt and pepper
- 1 tbsp olive oil
- 1 garlic clove(s)
- 400 g fish fillet(s) of your choice or prawns
- 1 onion(s), diced
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the penne according to the package instructions until al dente. Drain in a sieve. Wash the zucchini and cut into small sticks. Lightly fry in a pan with the garlic and thyme in hot olive oil. Season with salt and pepper and pour over the drained penne. In the same pan, sauté the diced onion until translucent. Add the olives in the oil and the cherry tomatoes. Pour over the cream. Add salt, pepper, and chili powder and bring to a boil briefly. Then pour over the penne and mix well. Now fry the fish fillet or prawns in the pan and then add them in portions to the vegetable pasta. Serve immediately. A dry white wine goes perfectly with this.
