Walnut croissants

Ingredients for 1 servings:

  • 400 g flour (wheat flour)
  • 125 g powdered sugar, sifted
  • 1 pinch of salt
  • ½ bottle of rum flavoring
  • ½ lemon(s), grated peel
  • 1 tsp ground cinnamon
  • 350 g butter, cold
  • 100 g walnuts
  • 2 egg yolks
  • Chocolate or cinnamon and sugar

Instructions

Working time approx. 35 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 35 minutes

Sift the flour onto a tabletop and make a well in the center. Add the powdered sugar, salt, egg yolk, rum flavoring, lemon zest, and cinnamon, and mix with some of the flour until a thick paste forms. Cut the butter into pieces and add to the paste. Add the ground walnuts and quickly knead all the ingredients, starting in the center, into a smooth dough. Chill the dough for 2-3 hours. Then form into pencil-thick rolls. Cut these into approximately 6 cm long pieces, roll them slightly thinner at the ends, and shape them into croissants. Place the dough croissants on a baking sheet lined with baking paper and place in a preheated oven (electric oven 175-200 °C, gas mark 3-4) for about 12 minutes. After baking, immediately roll the croissants in the cinnamon-sugar mixture or glaze them with chocolate.
