Jacket potatoes with bacon and mustard sauce

Ingredients for 4 servings:

  • 150 g bacon, streaky
  • 300 g whipped cream
  • 3 tsp mustard, medium hot
  • ½ bunch parsley
  • 750 g jacket potatoes, small

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Dice the streaky bacon and fry in a pan until crispy, then drain on kitchen paper. Meanwhile, boil the potatoes. Add the cream to the pan and simmer until creamy, then stir in the mustard. Chop the parsley. Pour the sauce into a warmed bowl. Sprinkle with the bacon cubes and parsley. Serve with the boiled potatoes.
