Ingredients for 1 servings:

  • 1 banana(s)
  • 150 g spelt flour
  • 1 tsp baking powder
  • 50 g ground almonds
  • 50 g applesauce
  • 1 tbsp rapeseed oil
  • 100 ml oat milk (oat drink) or almond milk
  • 250 g low-fat curd cheese
  • 1 cup mascarpone
  • 1 cup of cream
  • 1 bowl of strawberries
  • 1 bowl of blueberries

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

For your 1st birthday, without sugar

For the base: Whisk the banana with the milk, add the remaining ingredients, and make a batter. If the batter is too stiff, add a little more milk. Then spread the batter into a small springform pan. (I used a 12 cm silicone pan.) Bake the cake at 200 degrees Celsius (top/bottom heat) for about 30 minutes. Let the base cool, then cut it in half and level it. For the cake cream: Mix the mascarpone with the quark and fold in the whipped cream. Purée a few strawberries and blueberries separately. To finish, you’ll need a cake ring to layer the cake. Spread the purée on the bottom layer and arrange the strawberries on top. Spread half of the cake cream on top. Then spread the purée on the second layer. Arrange the blueberries on top and smooth the rest of the cream on top. Decorate the cake with fruit, if desired. Store the finished cake in the refrigerator. Before serving, carefully loosen the cake ring with a wet knife. Leaving some of the cream behind can be used to frost the cake.
