Cheese dumplings in onion soup

Ingredients for 4 servings:

  • 3 onions
  • 1 shot of white wine
  • some flour
  • 1 portion of dumpling dough from 250 g rolls, recipe in the database
  • 200 g cheese
  • 750 ml broth
  • 2 carrots
  • 1 pinch(s) of pepper
  • e.g. cream

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Grate the onions and sauté them in a pan with a little oil. Add a little flour and then deglaze with a little white wine. Then pour in the broth and let it simmer. Cut the carrots into small pieces or slices and add to the soup. Season everything, finish with cream, and let it simmer. Meanwhile, cut the cheese into small cubes and fill the bread dumpling dough with it. Add the dumplings to boiling water, bring to a boil briefly, and then let it rest. Serve with a little parsley.
