Ingredients for 4 servings:
- 600 g potatoes
- 1 bunch of soup vegetables
- 150 g carrot(s)
- 1 stalk(s) leek
- 1 piece(s) celery
- 3 tbsp vegetable broth, instant
- 250 g minced beef
- 1 garlic clove(s)
- 1 tbsp tomato paste
- 300 g beans, green, frozen
- salt and pepper
- 1 tsp olive oil
- Cayenne pepper
- 1 ½ liters of water
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Peel the potatoes and cut into large pieces. Clean the leek, celery and soup vegetables and also chop them into large pieces. Peel the carrots and cut them into thick slices. Bring about 1.5 liters of water to the boil, stir in the vegetable stock and bring back to the boil. Add the potatoes and vegetables, cover and simmer over medium heat for about 20 minutes. In the meantime, peel the garlic clove, chop it finely and knead it with the minced meat and tomato paste. Season with salt and pepper. Form small dumplings from the minced meat and fry them in heated olive oil. Add the beans and dumplings to the pot and simmer everything for about 10 minutes. Season with salt and cayenne pepper and serve. White bread goes well with this.
