Ingredients for 4 servings:
- 2 zucchini (approx. 500 g)
- 1 m.-sized onion(s)
- 20 g margarine
- 3 tsp vegetable stock powder
- 8 cherry tomatoes or 2 small tomatoes
- 2 tbsp crème fraîche
- Salt and pepper, white
- ½ liter of water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Clean and wash the zucchini. Coarsely grate about 100g of zucchini, roughly dice the rest. Peel and dice the onion, and sauté in hot fat. Sauté the zucchini cubes in it. Deglaze with 1/2 liter of water, bring to a boil, and stir in the vegetable stock. Simmer for about 8-10 minutes. Clean, wash, and finely chop the tomatoes. Purée the soup and stir in the crème fraîche. Season with salt and pepper. Heat the tomatoes and grated zucchini in the soup. Serve immediately.
