Ingredients for 4 servings:
- 1 celeriac
- 2 tbsp oil
- 2 tbsp flour
- 1 liter broth (instant)
- 2 egg yolks
- 125 ml cream
- Salt and pepper, white
- 2 tbsp chives, chopped
- 4 slices of white bread
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Thoroughly wash and trim the celery root and cut it into small cubes. Heat oil in a saucepan, sauté the celery cubes for 10 minutes, dust with flour, and pour in the broth. Season with salt and a little pepper, and simmer for half an hour. Whisk the egg yolk with the cream to thicken the soup. Garnish with toasted white bread cubes and chives before serving.
