Ingredients for 4 servings:
- 200 g potatoes
- 1 onion(s)
- 1 liter vegetable broth
- 150 g Parmesan
- 150 g crème fraîche
- Salt and pepper, freshly ground
- e.g. chives
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Peel and wash the potatoes, peel the onion, and dice both. Bring the broth to a boil, cover, and simmer the potatoes and onions over low heat for 20 minutes. Meanwhile, grate the cheese. Purée the soup, whisk in the grated cheese and crème fraîche. Heat the soup briefly again and season with salt and pepper. Garnish with chives, if desired.
