Ingredients for 1 servings:

  • 150 g flour
  • 100 g butter
  • 70 g powdered sugar
  • 2 eggs
  • 1 pack of pudding powder, cream flavor
  • 1 packet of baking powder
  • some lemon(s), grated peel
  • 50 g butter (liquid)
  • 50 g powdered sugar
  • 10 ml egg liqueur
  • 1 tsp flavoring (lemongrass)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Lemon cookies

Cream the softened butter and sugar until fluffy, then add the egg and mix well. Add the flour, baking powder, pudding powder, and lemon zest and knead into a smooth dough. Place two teaspoonfuls of the mixture onto a baking sheet and bake in a preheated oven at 160°C (320°F) for about 10 minutes. For the pastry filling: Combine the butter, powdered sugar, egg liqueur, and lemon zest. Spread over the pastry and allow to set.
