Ingredients for 1 servings:
- 550 ml milk
- 50 g margarine
- 2 tsp salt
- 2 tsp sugar
- 1 kg wheat flour
- 1 ½ packets of dry yeast
- 2 tbsp tzatziki
- 4 tomatoes, dried, preserved in oil
- 15 olives, black, best in garlic pickled version
- 4 peppers, green, pickled
- 1 tsp spice mix for tzatziki
- 3 garlic cloves, finely chopped
Instructions

Mix the dry yeast with milk and sugar to make a pre-dough, let it rise for 15 minutes. Combine the flour, margarine, salt, tzatziki seasoning, and tzatziki in a bowl, add the pre-dough, and knead thoroughly until you have a smooth dough. Let it rise in a warm place for 30 minutes. In the meantime, finely chop the remaining ingredients. (It is possible to use jarred or canned products. However, I would recommend marinating them in olive oil and Mediterranean herbs for a few hours. We always use the antipasti master around the corner.) Knead the yeast dough again, kneading in the finely chopped ingredients. Now place the dough in a large loaf pan (bread pan/Stollen pan), cut a 1.5 cm deep cut lengthwise in the middle (lightly oil the knife beforehand), and let it rise for another 40 minutes. Preheat the oven to 180°C (350°F) and bake the bread for about 55 minutes. For a free-form loaf, test for doneness as follows: Remove the loaf from the oven. If you tap the bottom of the loaf, it should sound hollow. Prepare in the oven using the “Quick” program in the large baking pan (for basic bread, the amount of flour and the remaining ingredients must be adjusted downwards; 1 kg of flour will bake too high!). Otherwise, simply prepare the yeast dough in the yeast dough program, then transfer it to the baking pan and bake in the oven. The bread is delicious lukewarm and tastes great with grilled food, tzatziki, and antipasti. Tip: This bread can also be made with 1 kg of bread mix for white bread. Recipe for a simple and delicious tzatziki: 1 cup quark 40%, 1 cup sour cream, 3 cloves of garlic, finely chopped or pressed, 2 teaspoons tzatziki seasoning, 3 grated gherkins. Mix all ingredients and let it sit for 1-2 hours, if possible.
