Ingredients for 4 servings:
- 6 m.-large potatoes, floury
- 6 m.-sized potatoes, mainly waxy
- 3 m.-large apples, red
- 1 jar pickle(s), sweet and spicy, quartered
- 3 tbsp mayonnaise (delicacy mayonnaise), possibly 4 tbsp
- some salt and pepper

Wash the potatoes and boil them with the skin on until tender, then let them cool slightly. Peel and cut into approximately 1 cm cubes. Peel, wash, and core the apples, then cut them into smaller cubes (approx. 5 mm). Cut the pickled gherkin quarters into 5 mm cubes as well. Be sure to save the liquid! Place the potato, apple, and cucumber cubes in a large salad bowl. Pour the entire cucumber liquid through a fine sieve over the remaining ingredients. Discard any seeds, etc. that collect. Season to taste with salt and pepper. Mix everything well, cover, and let it sit at refrigerator temperature for at least 1.5 hours, or preferably overnight. Just before serving, stir in 3-4 tablespoons of gourmet mayonnaise.
