Alsatian tarte flambée

Ingredients for 1 servings:

  • 250 g spelt flour, light (or half with wholemeal spelt flour)
  • 20 g yeast, fresh
  • 5 tbsp milk, lukewarm
  • ½ tbsp sugar
  • ½ tbsp salt
  • 1 egg(s)
  • 1 tbsp olive oil
  • 200 g crème fraîche
  • 300 g vegetable onions
  • 70 g bacon, cut into thin strips
  • Pepper from the mill
  • nutmeg
  • possibly water if needed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

healthy and delicious – with spelt flour

Put the flour in a bowl. Mix the fresh yeast with lukewarm milk and sugar and add to the flour. Add the salt, egg, and olive oil and knead into a yeast dough. Add a few drops of water if necessary. Cover and let rise for about 30 minutes. Then roll out the dough on baking paper into thin flatbreads (dust with a little flour to help). Spread with crème fraîche and sprinkle generously with freshly ground pepper and nutmeg. Peel the onions, slice them into wafer-thin rings, and top the tarte flambée with them. Cut the bacon into bite-sized pieces and scatter them over the onions. Bake on the middle rack of a preheated oven at 200°C for about 35 minutes until golden brown. Enjoy with a light red wine.
