Shrimp on avocado cream

Ingredients for 4 servings:

  • 2 small avocados
  • 2 shallots
  • 2 cloves garlic
  • 3 tbsp lime juice
  • 100 g bread(s) – spread (brunch pure)
  • 4 lettuce leaves
  • Cayenne pepper
  • 200 g shrimp(s) (Arctic shrimp)
  • cress
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve, pit, and peel the avocado. Finely chop the flesh, drizzle with lime juice, and puree. Finely chop the shallots and garlic and mix with the brunch. Season with salt and cayenne pepper. Spoon the avocado cream into spoons or small bowls. Tear the lettuce leaves into small pieces. Garnish with shrimp and cress. Serve with toasted baguette and rosé sparkling wine.
