Ingredients for 1 servings:

  • 400 g plums
  • 250 g flour
  • 2 tsp baking powder
  • 100 g walnuts, chopped
  • 100 g sugar
  • 2 eggs
  • 50 ml vegetable oil, neutral (e.g. sunflower or rapeseed oil)
  • 250 g vanilla yogurt
  • n. B. Sugar for sprinkling
  • n. B. Cinnamon powder for dusting
  • possibly paper cups

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

makes 12 pieces.

Wash, stone, and dice the plums. Meanwhile, preheat the oven to 180°C (top/bottom heat). Combine the flour, baking powder, and walnuts in a bowl. In a second bowl, combine the sugar, eggs, oil, and yogurt and beat until fluffy. Then fold in the diced plums. Finally, add the flour mixture and fold in gently. Stir the batter just until the flour is moistened. Fill the batter into 20 muffin tins or paper baking cups. Sprinkle about half a teaspoon of sugar on each muffin, then bake at 180°C (top/bottom heat) for about 30 minutes. Dust with cinnamon after baking.
