Chocolate-coconut-Nutella muffins

Ingredients for 1 servings:

  • 220 g flour
  • 60 g desiccated coconut
  • 50 g chocolate, chopped
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon powder
  • 3 tbsp cocoa powder
  • 1 egg(s)
  • 130 g brown sugar
  • 1 packet of vanilla sugar
  • 80 ml oil, neutral or 125 g soft butter or margarine
  • 200 g buttermilk
  • e.g. Nutella

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

with a delicious Nutella center. Makes about 15 pieces.

Mix the flour, baking powder, baking soda, cinnamon, desiccated coconut, chocolate, and cocoa powder well. In a second bowl, combine the egg, sugar, vanilla sugar, oil, and buttermilk. Then add the dry ingredients to the egg mixture and mix well with a wooden spoon until smooth. Spoon a little batter into the muffin tin (just covering the bottom) and, if desired, add a dollop of Nutella with a teaspoon and cover with batter. Bake in a preheated oven (160°C, fan-assisted) for 20-25 minutes. I usually make between 15-20 muffins, depending on the baking tin. Occasionally, I also stir a little Nutella into the batter.
