Light Christmas cake with apples, dates and yogurt icing

Ingredients for 1 servings:

  • 150 g flour
  • 40 g butter, soft
  • 70 ml skimmed milk, lukewarm
  • ½ tsp sugar
  • 1 pinch of salt
  • ½ pack of yeast (dry yeast)
  • 500 g apples, juicy, sour
  • 8 dates, dried
  • 20 g almonds, sliced
  • 2 tsp sugar
  • 150 g low-fat yogurt
  • 2 eggs
  • 2 packets of vanilla sugar
  • ½ tsp lemon(s) (grated peel)

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Low-fat

For the dough: Knead the flour, butter, milk, sugar, a pinch of salt, and the dried yeast into a smooth dough. Cover and let rise for 1 hour. Roll out the dough thinly and place in a coated springform pan (26 cm). Leave the edges 3 cm high. Now it’s time to preheat the oven! For the filling: Peel the apples and cut into small wedges. Cut the dates into small strips. Place both in the springform pan and sprinkle with the flaked almonds and 2 teaspoons of sugar. For the icing: Mix the low-fat yogurt with the 2 eggs, the vanilla sugar, and the grated lemon zest and pour over the cake. Bake in a preheated oven at 180°C for approx. 35-40 minutes. This super delicious cake has 132 kcal and 4 g of fat per slice (12 slices!)!! That’s 27.2%…according to Low Fat 30th grade, right?
