Ingredients for 1 servings:
- 200 g zucchini, finely grated
- 200 g carrot(s), finely grated
- 500 g apples, peeled and cut into small pieces
- 3 eggs
- 100 g hazelnuts, ground
- 100 g flour
- 100 g cornstarch
- 1 packet of baking powder
- 150 g sugar
- Salt
- Fat for the mold

Beat the eggs with the sugar and a pinch of salt until frothy. Stir in the grated zucchini, grated carrots, and nuts. Combine the flour, baking powder, and cornstarch and fold in, finally adding the apple pieces. Pour everything into a well-greased loaf pan and bake in a preheated oven at 170°C (convection oven) for about 1 hour (test for doneness, as the moisture content of fruits and vegetables varies considerably, and the cooking time may therefore vary).
