Rice and pea frittata

Ingredients for 4 servings:

  • 1 cup rice, cooked
  • 200 g peas, frozen
  • 1 onion(s)
  • 1 red bell pepper(s)
  • 8 eggs
  • 150 ml milk
  • n. B. Salt
  • n. B. Pfeffer
  • e.g. herbs, chopped, fresh or frozen
  • 1 tbsp oil or butter

great for leftover cooked rice and other leftovers

The cooked rice (preferably leftover rice) means a 300-400 ml cup. If you have less, either make a smaller frittata or add more vegetables. Preheat oven to about 180°C. Peel and finely dice the onion and bell pepper. Whisk the eggs with the milk, spices, and herbs. Mix the rice and vegetables, place in an ovenproof, oiled or buttered dish or pan (preferably coated, as this will help the frittata release easily afterward). Pour the egg mixture over the rice and heat briefly on the stovetop, then let it set in the oven for about 20-30 minutes (this largely depends on the size of the pan and therefore the thickness of the frittata). The frittata should have a delicious golden yellow to light brown color and, above all, be cooked through, meaning it has set. Now cut the frittata into pieces and serve. If you don’t have an oven, you can also cook the frittata on the stovetop in one large or two regular pans. First, cover and fry on the bottom over low heat until the liquid on top just stops running, then turn and fry briefly on the other side again. Serve with a fresh salad and a dip of your choice, e.g. ajvar, herb yogurt, red pepper jam, chutney, tomato salsa, or similar. Variations: This recipe is also great for turning leftovers from the vegetable drawer and/or fridge into a delicious new meal. Instead of peppers and peas, you can use grated carrots, spring onion rings, leek rings, diced zucchini, or similar. A little red pepper and some green vegetables really add a cheerful splash of color. If you have leftover ham, sausage, or roast leftovers, simply dice them and mix them with the rice and vegetables. You can also mix in some crumbled feta or grated cheese, or sprinkle it on top.
