Ingredients for 2 servings:

  • 2 portions of cooked rice, possibly from the day before
  • 1 can of corn
  • 2 eggs
  • 2 tbsp milk
  • salt and pepper
  • Maggi
  • n. B. Oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Vietnamese fried rice with eggs and corn – for vegetarians

First, make scrambled eggs with eggs, milk, salt, and pepper. Whisk everything together and fry in a pan. When it starts to set, move the egg in small pieces from the edge of the pan to the center, turning if necessary. Then set the egg aside. Next, fry the rice in a pan with oil and season with Maggi until lightly browned (you can use less, depending on your taste). After about 3 minutes, add the corn. Make sure to stir everything regularly to avoid burning! Just before the end of the cooking time, add the eggs, mix everything together, and fry briefly again.
