Ingredients for 4 servings:
- 600 g white cabbage
- 1 onion(s)
- e.g. fat, for frying, e.g. oil
- e.g. caraway, ground, if necessary up to 1 tsp
- 1 pinch(s) of sugar, some honey or beetroot syrup
- 1 shot of apple juice
- 2 tbsp flour
- 600 ml broth, strong, if necessary a little more
- 2 carrots, about 100 g
- 500 g pasta, preferably rolled tagliatelle
- e.g. chopped parsley
Instructions

vegetarian – but if you like, you can also fry meat, ham, sausage or similar
Bring the pasta water to a boil. Trim and shred the cabbage or cut it into bite-sized pieces. Trim and dice the onion, and fry it in the fat. Add the cabbage and fry it vigorously, stirring frequently so that the cabbage strips brown all over. Sprinkle the caraway seeds and sugar over the cabbage and continue to fry or caramelize. Add the apple juice and continue to fry until it has evaporated and the cabbage is nicely browned. Then sprinkle over the flour, add the flour and fry until lightly browned, and deglaze with the stock. Cover and continue to simmer over low heat until the cabbage is tender (about 15-20 minutes). Trim the carrots, finely grate them, and add them. Add the pasta to the cooking water and cook until tender. Drain the pasta, mix well with the braised cabbage, and finally, sprinkle with the parsley to serve. About the broth: Whether you use vegetable broth or meat broth is up to you – but it should be a slightly reduced, strong broth. The amount can vary depending on the cooking temperature, how tightly the lid is sealed, etc. – there should still be some sauce in the pot at the end of the cabbage’s cooking time so that the pasta can absorb it. If you like, you can season with a little thyme, marjoram, paprika powder, or something similar – but it’s not necessary. Instead of the carrots, you can also dice a red bell pepper – or just use a bit more cabbage. The braised cabbage is also great to prepare in advance and tastes almost better reheated. You can also heat the cooked pasta together with the braised cabbage, adding a little more broth if necessary.
