Savory oven-baked potato pancakes

Ingredients for 2 servings:

  • 600 g potatoes
  • 150 g onion(s)
  • 150 g bacon, streaky
  • 150 g Gouda, middle-aged
  • 2 eggs
  • Salt
  • pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

a potato pancake variant from the oven

Peel the potatoes and onions. Cut the bacon into small cubes. Coarsely grate the potatoes, onions, and cheese. Then mix the ingredients well with the eggs and season with salt, pepper, and nutmeg. Be careful with the salt; the bacon and cheese will already be salty. Pour the mixture into a baking dish or shallow ovenproof pot and bake for about 45 minutes at 180°C in an unheated oven. It’s ready when it’s a nice golden brown.
