Perfect coconut cubes

Ingredients for 1 servings:

  • 150 g flour
  • 30 g cornstarch
  • 125 g butter
  • 60 g powdered sugar
  • 1 egg yolk
  • 2 drops butter-vanilla flavoring
  • 100 g mixed candied fruits
  • 100 g desiccated coconut, roasted
  • 75 g marzipan – raw mass
  • 125 g sugar
  • 25 g pistachios, chopped
  • 2 eggs
  • 1 lemon(s), peel
  • 175 g powdered sugar
  • 20 g butter, soft
  • 5 tbsp lemon juice

an effort that is worth it

Knead the flour, cornstarch, butter, powdered sugar, egg yolk, and flavoring into a smooth dough and let it rest in the refrigerator for 1 hour. Finely chop the fruit mix and grate the marzipan. Then stir in the desiccated coconut, pistachios, sugar, eggs, and lemon zest. Roll out half of the dough to about 20x26cm and a thickness of 3.5mm. This is best done between two sheets of baking foil. Be careful, the dough breaks very easily!!! Place it on a baking tray. Spread the filling mixture on top. Roll out the second half of the dough to the same size and place it on the filling mixture, press down lightly, and bake at 150°C for about 25-30 minutes (fan oven). Bake at 175°C using top and bottom heat. Mix the powdered sugar with the butter and lemon juice and spread it on the baked cookie dough. If you like, you can also sprinkle desiccated coconut on top. Then cut into 2.5 x 2.5cm cubes (this works best with a pizza cutter). I can highly recommend these cubes to everyone, as they taste simply amazing!
