Ingredients for 2 servings:

  • 2 portions of fish fillet(s), e.g. salmon, frozen
  • 2 small bell peppers, red
  • 1 onion(s)
  • 2 tomatoes
  • 1 zucchini
  • 1 small broccoli
  • olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Brush a small baking dish with olive oil and place the fish in it. Season with salt and pepper. Cut the bell pepper into wide strips, the tomatoes into slices, the onions into rings, the zucchini into slices, and the broccoli into florets and arrange them on top of the fish. Season with salt and pepper and drizzle with olive oil. Place in the oven at 180 degrees Celsius and bake for about 25 minutes until crispy. Serve with rice or couscous and a tomato salad.
