Buttermilk mashed potatoes with a bacon and onion melt

Ingredients for 2 servings:

  • 500 g potatoes, floury
  • 40 g bacon or ham, diced
  • 40 g butter
  • 1 onion(s), red
  • 150 ml buttermilk
  • herb salt and pepper
  • nutmeg
  • Chive rolls

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Boil the potatoes until soft, then peel them. Add 20g of butter to the buttermilk, season with herb salt, pepper, and nutmeg, and heat in a saucepan. Press the potatoes through a potato ricer and mix in, seasoning with salt and nutmeg to taste. Heat the remaining butter in a pan, dice the onion, and fry with the bacon. To serve, pour over the mashed potatoes and garnish with chives, if desired.
