Ingredients for 2 servings:
- 2 tbsp olive oil
- 300 g turkey schnitzel
- 2 tbsp olive oil
- 1 tbsp, heaped flour
- 300 ml water, maybe a little more
- n. B. Salt
- 1 tsp, crushed paprika powder, sweet
- 1 pinch(s) salt and pepper, black
- 1 shot of red wine or alternatively medium sherry
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Cut the turkey cutlet into strips or cubes. Heat the olive oil in a pan and fry the turkey pieces in the pan, taking care not to overcook them; they shouldn’t become crispy. Remove the turkey pieces and add more olive oil to the pan. Add the flour and stir well. The flour should brown but definitely not burn. You need to be careful here and have water ready for deglazing. Deglaze with a small amount of water, i.e. add a little water while stirring. Repeat this process until a creamy sauce forms. Add the spices, cover the pan, and simmer over low heat for 10 minutes, stirring frequently. Add more water if necessary and season with red wine or sherry to taste. Finally, add the turkey pieces to the pan and simmer for another 2 minutes to reheat the turkey. Of course, you can fry a very finely chopped onion before adding the flour to the pan, but don’t let it overcook before adding the flour.
