Latte Macchiato – Cookies

Ingredients for 1 servings:

  • 100 g chopped white chocolate coating
  • 50 g whipped cream
  • 1 packet of vanilla sugar
  • 4 g espresso powder
  • 1 tbsp water, warm, possibly 2 tbsp
  • 60 g butter
  • 100 g flour
  • 25 g cocoa powder
  • 1 pinch of salt
  • 1 pinch of baking powder
  • 50 g powdered sugar
  • 1 egg yolk
  • Confectionery (chocolate mocha beans)
  • Sugar pearls, silver

Instructions

Working time approx. 50 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 50 minutes

Cream: Boil the cream. Pour it into the chocolate coating along with the vanilla sugar. Melt both. Chill the mixture for about 4 hours. Dough: Dissolve the espresso powder in 1-2 tablespoons of warm water. Knead the butter cubes, flour, cocoa, salt, baking powder, powdered sugar, egg yolk, and espresso. Chill the dough for 1 hour. Roll out in portions between sheets of cling film to a thickness of about 1/2 cm. Cut out small squares and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C for 12-14 minutes. Let cool. Whip the vanilla mixture until creamy. Transfer to a piping bag fitted with a small star nozzle. Pipe dots onto the squares and place mocha beans on top. Lightly dip the underside of the silver pearls into the remaining vanilla cream and decorate the cookies with them. Let dry and store in a cool place.
