White beans with parsnips and apple rings

Ingredients for 4 servings:

  • 1 can white beans, approx. 500 g
  • 400 g parsnip(s)
  • 1 m.-sized onion(s)
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 200 ml vegetable stock
  • 1 tsp sambal oelek
  • 2 apples
  • some butter
  • salt and pepper
  • 1 tsp coriander powder
  • 1 tsp, heaped paprika powder
  • Parsley

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Open the can of white beans and drain the water. Peel and dice the parsnips. Then peel and dice the onion. Wash the apples and core them. Slice both apples. We didn’t peel the apples. Why should we? Heat olive oil in a pot or large pan and sauté the diced onion for 2 minutes over medium heat. Add the diced parsnips and sauté both for a further 4 minutes. Add the tomato paste and stir in. Caramelization is desirable. Add the vegetable stock and the white beans. Stir everything well and mix. Season to taste with salt, pepper, coriander, paprika, and sambal oelek. Simmer over low heat for about 10 minutes. Just before serving, sprinkle the chopped parsley over the beans, if desired. Meanwhile, heat a little butter in a second pan and sauté the apple slices for 4 minutes on each side. Plate up. First add the beans and parsnips, then garnish with the apple slices.
