Ingredients for 5 servings:

  • 500 g potatoes
  • 4 carrots
  • 70 g mountain lentils
  • 2 apples
  • 2 onions
  • 50 g walnuts
  • 2 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • 1 tsp salt
  • pepper
  • 1 tbsp applesauce

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Prepare the mountain lentils according to the package instructions. Peel the potatoes and carrots, dice them, and cook for about 20 minutes. Peel the apples, dice them, and fry them with the onions in olive oil. Briefly toast the nuts. Mash the lentils, potatoes, and carrots and season with salt, vinegar, salt, and pepper. Stir in the apple puree and the apple-nut mixture, and adjust the seasoning if desired.
