Penne with arugula

Ingredients for 4 servings:

  • 350g penne
  • 5 tbsp olive oil
  • 2 garlic cloves, lightly crushed
  • 200 g arugula
  • 2 red chili peppers, cut into wide rings
  • some cheese (Pecorino), freshly grated

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Bring lightly salted water to a boil in a large pot. Cook the pasta until al dente. Meanwhile, heat the olive oil in a large pan. Sauté the garlic, arugula, and chili peppers for 5 minutes, until the arugula has wilted. Stir 2 tablespoons of the pasta cooking liquid into the arugula, then drain the pasta and add it to the pan. Cook for 2 minutes, stirring frequently, then transfer everything to a warmed serving dish. Remove the garlic and chili peppers. Sprinkle the finished dish with pecorino and serve.
