Swede stew with goose breast

Ingredients for 4 servings:

  • 1 large turnip(s)
  • 2 m.-sized onion(s)
  • 1 goose breast
  • 2 apples
  • 1 kg potatoes
  • pepper
  • Salt
  • Sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

Place the goose breast in a large pot (approximately 8-10 liters). Half fill the pot with water. Add some salt and pepper and place on the stove. When the water boils, simmer the goose breast for about 1 hour. Season to taste with salt and pepper if desired. Remove the goose breast and set aside on a plate. Peel and dice the potatoes. Peel and dice the turnip. Peel and finely dice the onion. Peel and finely dice the apples. Add the ingredients to the broth and bring it back to a boil on the stove. Remove the goose breast from the bones and finely chop the meat. Add the meat to the pot. Season with pepper, salt, and sugar. Allow the stew to reduce. The stew tastes best when it has been left to stand for a few hours and then reheated.
