Spicy cucumber salad à la Gabi

Ingredients for 4 servings:

  • 1 cucumber(s), unpeeled, sliced
  • ½ tsp salt
  • 2 shallots, halved, cut into strips
  • 1 chili pepper(s), red, pitted, cut into rings
  • 3 tbsp light balsamic vinegar
  • 3 tbsp sesame oil
  • Black pepper, freshly ground
  • Salt
  • Sugar
  • 1 tbsp coriander, chopped
  • 1 tsp sambal oelek
  • 1 tsp chili powder

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Place the cucumber slices in a fine sieve, toss with the salt, and let stand for 30 minutes. Rinse under running water, drain, and place in a salad bowl, tossing with the shallots and chili. Whisk the balsamic vinegar with the sesame oil, season with salt, pepper, and sugar, and stir in the coriander, sambal oelek, and chili powder. Pour the salad dressing over the salad and toss to combine.
