Blueberry Mascarpone Muffins

Ingredients for 12 servings:

  • 110 g sugar
  • 125 g butter or margarine
  • 125 g mascarpone
  • 2 packets of vanilla sugar
  • 3 drops of vanilla flavor
  • 2 eggs
  • 200 g flour
  • 50 g cornstarch
  • ½ pack of baking powder
  • 50 ml mineral water or milk
  • 125 g blueberries

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Preheat oven to 150°C fan/convection oven. Arrange 12 muffin cups on a muffin tin. Cream the butter/margarine until fluffy, add the mascarpone, sugar, vanilla sugar, and flavoring, and continue beating. Add the eggs one at a time and mix in. Mix everything until very fluffy. Wash and sort the blueberries. Mix the flour with the starch and baking powder and sift. Add the flour mixture and milk/water to the batter and mix briefly. Fold in the blueberries and divide the mixture between the muffin cups. Bake for approx. 20 minutes.
