Ingredients for 4 servings:
- 3 apples
- 250 g smoked tofu
- 2 onions
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 kg potato(s), floury
- 200 ml cream
- 400 ml milk
- 1 pinch of nutmeg, grated
- Salt
- Pepper, freshly ground
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Boil the unpeeled potatoes in a pot for about 25 minutes. Finely chop the onions and slice the apples. Sauté the onions in a pan with olive oil, then add the apple slices. Peel the potatoes and return them to the pot. Add the cream and milk, mash everything, and heat through again. Season with nutmeg, salt, and pepper. Cut the tofu into small pieces and fry with the apples and onions. Season to taste with soy sauce, salt, and pepper. Divide the mashed potatoes among plates and top with the apple tofu.
